Recipe Of The Month: Naughty But Nice!

Ice Cream Sandwiches

Serves 4


75g dark chocolate, chopped into chunks

200g peanut butter

175g golden caster sugar

1 large egg

3 bananas

2 tbsp double cream

1½tsps vanilla extract


Heat the oven to 180°C and prepare two large baking trays. Chop the chocolate into chunks and combine with the peanut butter and sugar. Crack in the egg and mix to form a dough. Break off chunks of dough (about the size of a cherry tomato) and place them on the baking trays. Press the cookies down with the back of a fork. Bake for about 12 minutes until golden around the edges. Leave to cool for 5 minutes.


Meanwhile, blitz the bananas (chopped and frozen in advance) with the cream and vanilla essence to form a thick ice cream. Scoop into balls, and sandwich between the cookies. Serve immediately.
